In the heart of New York’s Hudson Valley, Fish & Game celebrates the bounty of the valley with a set menu that responds to the seasons and availability of products from farmers. That same seasonal attention is also dedicated to Fish & Game’s vast natural wine list. The restaurant, which offers a new menu each week, is a collaboration between chefs Zakary Pelaccio and partner Jori Emde and film and theatre producer Patrick Milling Smith. It has been said that Pelaccio (of Fatty Crab and ‘Cue fame) could do for the Hudson Valley what the French Laundry did for Napa Valley.
Fish & Game opened in 2013, quickly becoming one of the most interesting restaurants in the region. Nearly every bit of the food is produced within a 40-mile radius of Hudson. The owners pride themselves on ordering solely whole animals that are from trusted farms. Pelaccio also uses every single muscle and bone. But the building Fish & Game is housed in is also unique. What was once a blacksmith’s shop, now boasts an interior designed by architect Michael Davis that is the perfect combination of rustic comfort and high-end refinement. The building’s furnishings are local too. Carolina Wallner in Rhinebeck and Bob Golden in Amagansett are responsible for the plates and bowls, while the tables and bar were built by woodworker Peter Heilman.
If you aren’t amazed yet, the prix fixe seven-course productions will have you sold on the first bite… and never fear if you don’t eat meat! There are vegetarian options available as well. You’ll speak just as highly of the restaurant as the chefs do about the beauty of Hudson and the farmers who work here.
